Fishy Lunch

Maya-Maya Fish in Sweet Chili Sauce

Slice maya-maya fish (meat part only) and add salt and pepper. Set aside. Heat oil in a pan then fry the fish until crispy brown. For the sauce, saute ginger, onions and garlic in oil. Put cornstarch dissolved in hot water then bring to boil.Add carrot sticks and sweet chili sauce and continue stirring until the sauce thickens. Put the fried fish, simmer for a minute. Garnish with finely chopped leeks. Serve hot.
