Ampalaya's Way of Cooking

Stir-Fried Ampalaya(Bitter Melon) in Shrimps and Egg


200 grams Ampalaya (Bitter melon), sliced thinly
100 grams shrimps, shelled and sliced
1 pc onion
3 cloves garlic minced
2 pcs. medium tomatoes,quartered
3 pcs. large eggs, beaten
2 tbsp. olive oil


* In a pan, heat olive oil. Saute garlic, onions and tomatoes.

* Add shrimps, stir for a minute. Add ampalaya, salt and pepper. Keep covered for about 2 minutes. Do not stir to keep ampalaya from becoming bitter.

* Uncover the pan, put beaten eggs and mix in all the ingredients.

* Serve hot. Enjoy eating.
