I always enjoy cooking whenever I have more time especially on weekends. For dinner yesterday I cooked this caldereta (beef stew). I had been cooking this before and its been a good timing because I had a chance to bought some fresh cuts of beef in the meat shop. I boiled the beef cubes until very tender for about 2 hours. Saute garlic and onions, put caldereta mix seasonings in the broth . Boil until sauce thickens. Add pre-fried potatoes and carrots. Simmer for a few minutes. Add bell pepper as garnishing. The sauce itself is already a meal.Yummy!
I really spent time at home last Sunday cooking meals because I was not able to cook during weekdays. Me and my brother had these delicious menus of garlic shrimps-- fresh shrimps in sauteed garlic in olive oil then added with salt, pepper and seasonings. I also cooked lapulapu (grouper) fish in broth with eggplant and green leafy vegetables. Fresh cuts of lapu-lapu fish (meaty part) boiled with onions, added with eggplants and topped with varieties of fresh green leafy vegetables. Of course, lunch would always be perfect with steamed rice. Its always fun to cook and eat especially during weekends.
This is a preserve of crushed durian fruit that I like to put on as spread on my favorite loaf bread. The jam is naturally flavored with real mushy durian ingredient. It is not so sweet and I love the creamy taste. Sometimes its good to try the real fruit jam instead of the usual sandwich spreads, peanut butter or cheese.
My schedule since Monday until Friday is all occupied starting from the home, office and school activities. I do not have time to cook meals . I did some take food from restaurants usually for dinner because my hands were already tired from work and studies. The food that I bought were great tasting. Cooked well and can also satisfy my cravings after the stress of the day. But personally cooked meals are what I like most.I hope this weekend I can spend time in the kitchen for some meals and be posted in here.
I got a chance to bought one of my favorite sweets, the Pulvoron, similar to shortbread.It is made offlour, sugar, milk, and nuts. For these varieties, I had more of the cookies and cream . The combination of the cookies and cream are so yummy sweet and I was thinking that it is similar to the ice cream of the same flavor. Great dessert at any time of the day.
My relatives were scheduled for a vacation in Manila and they spent an overnight stay at home before they traveled. Their meals now require special preparations because of health concerns as elderly. Before they go, I prepared their packed foods like sliced fruits of papaya,apples and oranges. I also made chicken sandwich -- sliced bread filled with mayonnaise,cheese, egg and chicken strips. The fruits were placed in a canister for easy opening and the sandwiches were wrapped in a sandwich wrapper for easy take-out when they are on board the plane. It was quite time consuming to prepare for all of these especially that I had also some other things to attend so I just did it quick and fast. They enjoyed eating their food for travel that I prepared.
I cooked early for breakfast with these yummy combos of spicy corned tuna and scrambled eggs. Corned tuna is stir fried in onions and added with little salt and seasonings. Eggs are quick cooking ingredients so I finished preparing this meal before 7:00 am. Delicious breakfast menu together with freshly cooked rice. Good meal to prepare for an early morning rush.
My friend MyMy gave me this persimmon and I am a little curious about this kind of fruit because it is uncommon here in the tropics. I read that persimmon according to the ancient times is the fruit of the gods and an edible fruit that belongs to the species of trees. I like its color of bright orange. I have not sliced this fruit yet and its still inside the refrigerator. Perhaps I can taste this imported fruit one of these days and see if it can pass my taste buds.
It was dinner time again at home. Good thing because I had a chance to bought some vegetables and shrimps in the market then went home early. For this menu I used kulitis leaves, a green leafy vegetable that looks like spinach. It is rich in vitamins and minerals. Seldom I can buy this kind of leafy vegetable and I was glad that I found one in the market. Flavorful broth of shrimps and vegetables. Simply healthy and delicious.
Before going home last night I passed by at Bistro and bought this yummy butter cake. Soft and creamy cake that I made into slices. I love to savor each bite pieces. One perfect partner for my favorite morning coffee.
